Abura Age Deep Fried Tofu

1 ( 250 g )

packageof regular firm tofu

600 ml {568 g}

vegetable oil

Directions

Cut tofu lengthwise into 1 cm thick slices.

Remove the excess moisture from the block of tofu by wrapping it in a clean towel and placing it between 2 cutting boards, let stand for an hour or two.

Fry at 130C/266F for 6 minutes. Reserve

Fry at 160C/320F until golden brown.

Boil slices in water to leach out any oil. Drain and squeeze dry as above.

Cut in half widthwise and slit pouches to allow for filling.

Simmer in following mixture,scaling enough to cover.

1 cup

dashi (Awase, or Kombu for vegetarian)

5 TBL {62 g}

granulated sugar

3 TBL {48 g}

soy sauce

This can be frozen so its best to make lots of extra. I would think that this should be frozen in the liquid to protect against freezer burn.
