Apple Cinnamon Coffee Cake
Bake 55-60 minutes @ 350F/176C, 1 apple,120ml milk, 2 eggs
Cream with paddle attachment, until light and fluffy

While creaming, mix in small bowl
brown sugar |

cinnamon |
While creaming, sift
AP flour |

baking powder |
While creaming, Peel and dice, toss in 1 T of flour mixture, strain flour back
medium apple, 1 x 0.5 cm dice |
Add slowly to creamed butter and thoroughly mix
eggs |
Mix in small measuring container
milk/light cream |

vanilla |
Add and gently mix by hand in this order, until thoroughly blended, do not overmix

Pour half of the flour mixture into a slinged loaf tin.
Add 1/2 cinnamon sugar mixture and 1/2 apples.
Add remaining batter, cover with remaining apples and cinnamon sugar.
Blend with chopstick/knife and press smooth using spatula.
Bake @ 350F/176C for 55-60 minutes.
