BBQ Steak
Steak Notes
Dry surface throughly.
Trim excess fat from steak, leave just a little bit on the edge.
Rub generous amounts of Keg spice on steak, its a lot less salty than it looks.
Cook to medium-rare, carry-over to medium.
Cook for ~3 minutes a side,covered,flipping just once or moving if necessary to avoid flames.
Remove from heat and let rest covered for 10 minutes.
Use fat trimmings for potatoes and/or rub generous amounts of salt on fat to make crackling.
Cut into 1 inch pieces. Place on top of tasty potatoes.
