Sift and whisk dry ingredients.

Beat egg whites to 2" peaks.

Mix well "wet" ingredients.

Fold together wet and dry ingredients.

Fold in egg whites.

Spray/brush fat onto waffle iron.

Spread waffle batter close to edge.

Bake for 5 minutes until golden brown.
