Prepare Pans

Make chocolate mixture
In a 500ml+ container with spout mix, microwave until boiling (40s on high)

Make Batter
In mixer bowl mix on low speed for 30 seconds

Make well in dry ingredients and add chocolate mixture, blend for 1 1/2 minutes, scraping down as necessary
Make meringue
In clean mixer bowl whip, until soft peaks:

Fold batter and meringue
Fold 1/3 meringue into batter using kitchen aid whisk.
Fold in remaining 1/3 with spatula.
Repeat.
Bake
Transfer to baking pan and bake for 40-50 minute.
Prepare elevated rack for cooling, using 4 cans,cups or mugs of equal height at least 4" above work surface.
Cool and depan
Invert onto elevated rack and let cool for 1 1/2hours until sides of pan are cool to touch.
