2018-12-20 Purchased 8 thighs, 2 legs from Metro first thing in the morning (Thursday, 5 days before Christmas). Meat dept, cut up legs to satisfy order of 8 thighs. Was not busy. Best before date of thighs/legs was 25th. Backup plan if no fresh thighs available in any supermarket was to get the prepackaged ones from FreshCo which are seasoned. |

2018-12-26 Really pressed for time this year for Christine. Ken was ok, should do as much mise as possible the day before. That said the macaroni and cheese was nice and al-dente after making and cooking at the last minute (4-5 minute par cook) at moms house and baking for only 1/2 hour. Can make the panko topping the day before or earlier in the day. |

2019-01-06 Just make oily rice (20 minute cook should be enough) instead of stuffing legs. Still debone legs though. Make a 1.5-2x recipe of rice. |
