Salad - 2.5 romaine hearts used negligible left so good quantity

Red Pepper Soup - 3x made 2x sufficient of L/O wanted otherwise 1x sufficient for night of

Jello - 3 lg packs made, good amount with decent leftovers (2pks provides one 1-2 servings of L/O)

turkey - 1/2 breast, 1.5 drums, 7.5 thighs, 3 wingettes, 4 drumettes - good amount of leftovers. :-)

bihon - 1 pkg noodles, 2.5 pkgs of snow peas, 3 large carrots, 1 full peach size jar of mushrooms - good amount 1.5 cups leftover

yams - 2 kg bag from Costco - good amount with leftovers

brussels -3lb bag with approx. 2 cups L/O

potato salad - 6-7 small potatoes, 2 cans clementines (could make less but forgot to serve until the end)

corn pudding - almost 1 full 8x8 pan left - decent for L/O

stuffing- about 2 cups L/O

Rice - 3-4 cups left good amount - ask mom how much she made? 4.5 cups rice

Purchased 8 thighs, 2 legs from Metro first thing in the morning (Thursday, 5 days before Christmas). Meat dept, cut up legs to satisfy order of 8 thighs. Was not busy. Best before date of thighs/legs was 25th. Backup plan if no fresh thighs available in any supermarket was to get the prepackaged ones from FreshCo which are seasoned.

Really pressed for time this year for Christine.

Ken was ok, should do as much mise as possible the day before. That said the macaroni and cheese was nice and al-dente after making and cooking at the last minute (4-5 minute par cook) at moms house and baking for only 1/2 hour. Can make the panko topping the day before or earlier in the day.

Just make oily rice (20 minute cook should be enough) instead of stuffing legs. Still debone legs though.

Make a 1.5-2x recipe of rice.

Purchased 8 thighs + 2 legs + 3 wings from Metro on Fri. 20th afternoon, not too busy. Had to get them to cut up thighs.

Wash brusselsprouts night before so they are dry. Split & toss in oil day of bake cut side down on bare sheet pan 30m@450F/232C
