Cinnamon Belgian Waffles

2 cup {250 g}

AP flour

4 tsp {20 g}

baking powder

1/2 tsp {3.0 g}

salt

1/4 tsp {0.6 g}

ground cinnamon

2 TBL {25 g}

sugar

large eggs, divided

2 cup {488 g}

milk

1/2 cup {112 g}

vegetable oil

1 tsp {4.3 g}

vanilla

Preheat a waffle iron to medium-high heat

In a medium bowl whisk together flour, baking powder, salt, cinnamon and sugar

Separate your egg yolks into a large bowl and your egg whites in a separate smaller bowl

In a large bowl mix together egg yolks, milk, oil and vanilla

Add dry ingredients to wet ingredients and stir until combined

Whip the egg whites for 2-3 minutes until stiff peaks form. Fold whipped egg whites into the waffle batter

Spray waffle iron generously with non stick spray and pour batter into the iron 3/4 - 1 cup per waffle

Cook according to waffle iron’s instructions- nice golden color but not too crisp
