Crispy Flaky Scallion Onion Pancake

Day Before
Dough
Start kettle.
In kitchen aid bowl mix:
all purpose flour(!100.0% !) |

salt(!1.8% !) |
Add and then mix:
boiling water(!65.2% !) |
Add remaining water, then mix until smooth 5-6 m.
room temperature water(!10.0% !) |

Let rest overnight in refrigerator for best results.
Day Of
Divide into

Cover and let rest for 1/2 hour to bring the dough to room temp.
Meanwhile finely chop:
green onions |
Divide into
piles and reserve. |
Roll into thin sheet, brush with roux leaving 1cm border or roll into long strip using KA pasta roller to thinness 5.
Sprinkle with (kosher) salt to taste. Spread onions evenly. Roll into cylinder then into stacked coil/snail . Brush both sides with roux then reserve and cover.
Rest 30 minutes.
Heat heavy bottom non-stick pan over medium (4.5) heat.
After dough has rested roll out again into flat round 4-8 mm, using a large split ziplock bag.
Place in hot pan and cook until lightly browned ~30s, flip and brush with oil. Repeat browning, flipping and oiling until well browned, flaky and done. Time varies with thickness. Squeeze dough together to encourage flaking.
You can also shallow fry this.
Cut into 8ths and reserve in a warm oven until renaming pieces are done. Serve immediately.
