Quantities on left to make 16 square financier in silicone mold.
Quantities on right to make 12 mini-muffin square financier.
Brown butter, strain, reserve and cool.

Mix in small bowl
AP Flour 30 g |

ground almonds 55g |

powdered sugar 90g |

salt 1/8 t |
Lightly beat
egg whites 3 |

vanilla 1/2 t |
|
almond extract 1 t |
Mix wet into dry and fold throughly.
Transfer to ziplock bag, cut corner and pipe into cooking tin.
Cook for 5 minutes, place small fruit piece (1/4 cherry, raspberry, blueberry) in centre if desired, bake for 15 minutes more.
Unmold and cool on rack.
