The night before in food processor bowl with blade in, and mix by hand

Two hours before eating add,mix until it just comes together and let hydrdate/autolyse for 15 min

Add, then process until well blended and window paned:

Let rise in covered bowl for 1 1/2 hours.
Preheat oven with upside down sheet pan to 500F/260C.
Turn out dough and form out on parchment. Oil, cover and let rise for 30 minutes.
Top and bake for 11 minutes.
