grated ginger

120 g

green onion, brunoise

1/2 tsp {3.0 g}

salt

60 g

neutral oil

Mix salt, ginger, scallion in large heatproof bowl.

Heat oil till 375F/smoking, pour over mixture, let cool.

Prefer more ginger, doubling. Yield for grated ginger is about 50%, so buy equal amounts of ginger, onion by weight.

The ratio of salt is ok, can always add if necessary, decreasing oil.
