90 g 3/4 cup

AP Flour

45 g 1/4 cup

Teff

240 ml {240 g} 1 cup

water

Mix above ingredients in a container, and let sit at room temperature for three days, until mixture is nice and sour.

After three days….

Heat large heavy nonstick skillet to medium low, make sure you have a lid.

0 - 45 g 0 1/4 cup

AP flour

2.5 ml {3.1 g} 1/2 tsp

salt

2.5 ml {2.6 g} 1/2 tsp

baking powder

Add enough flour to make a thin batter able to maintain a 5mm height in the pan. Add salt and baking powder. Mix thoroughly.

Pour batter in pan, bubbles should start to form, cook until all bubbles have popped and top is dry. Flip, cook for a minute or so, then flip into covered plate. Crispiness will be gone after sitting for a while.
