Lemon Potatoes

2 hour prep - Serves 4 - Preheat oven, broiler.

medium yukon gold potato, 2 cm dice (8-12 pieces/potato)

{6 g} 2

chicken bouillon cubes (also provides all the salt).

1 cup {237 g}

boiling water

1

lemon, juiced

{6 g} 2

cloves garlic, minced

1 tsp {1.5 g}

oregano

1 tsp {1.4 g}

thyme

1 tsp {1.2 g}

rosemary

Pepper to taste

2 TBL {27 g}

olive oil

Boil diced potatoes until done or barely done. 30 minutes. Drain.

Mix and dissolve bouillon cubes in water in casserole dish to hold potatoes Add remaining ingredients including potatoes. Toss to coat.

Drizzle/spray tops of potatoes with olive oil.

Bake/broil potatoes on middle rack until edges are browned, 1-1.5 hour or so
