Onion Rings
onions, cut into 5 mm (1/4") rings. |

Dry:
flour |
|
baking powder |
|
salt |
Wet:
egg yolk |
|
club soda |
Whisk to soft peaks:
egg white |

Sift together dry ingredients

Mix together egg yolks and club soda.

Add wet to dry and mix well.

Whisk egg white into soft peaks then fold into batter.

Dredge rings with extra flour (optional).

Drip few pieces at a time into batter.

Fry @ 350F/176C until golden brown ~2-3 minutes.

Drain rings and salt.
