racks of ribs (back preferred)

1 cup {180 g} 2/3

1/2 cup {127 g}

bbq sauce, PC smokin stampede

Remove skin from ribs Rub dry rub into meat.

marinate overnight.

wrap in parchment, then wrap tightly with foil.

Bake in 275F/135C oven for 2 1/2 hours.

BBQ finish

Preheat BBQ for 1/2 hour before time is up on high.

Remove wrapping, salt to taste if necessary.

Brush with BBQ sauce, place on BBQ to laquer sauce.

Keep on low to prevent burning, flip as required, brush more sauce as available.

Oven Finish

Brush ribs all over with BBQ sauce.

Bake in 350F/176C oven for 15-25 minutes.

Until top of ribs are "dried".

Note

2015-07-25

Finished ribs after 2 hours, let dry, season to taste with salt. Put sauce when cooled, baked for 25 m, with sauce brushed on again at 15 minutes.
