Parmesan Panko Crusted Cod

INGREDIENTS

3/4 cup {75 g}

freshly grated Parmesan cheese

1/2 cup

panko

1 TBL {14 g}

melted butter

2 tsp {4.2 g}

paprika

1 TBL {3.7 g}

chopped fresh parsley (or 1 teaspoon dried parsley)

1/4 tsp {1.5 g}

sea salt

1 TBL {13 g}

extra virgin olive oil

{600 g} 4

cod fillets, (about 6 oz. each)

INSTRUCTIONS Preheat the oven to 400oF. Line a baking sheet with parchment paper or foil.

In a small bowl, mix the melted butter with the panko until the panko is dampened. Add it to a shallow bowl and mix together with the Parmesan, paprika, parsley and salt. Drizzle the cod with olive oil (rubbing it into the front and back of the fillet), then dredge in the cheese mixture, pressing it in lightly with your fingers. Transfer to the baking sheet. Top cod with any leftover cheese mixture.

Bake until the fish is opaque in the thickest part, 10-15 minutes. Serve with the lemon slices or wedges.
