egg whites

250 g ( 120 - 300 g )

sugar, blitzed

6/8 tsp {2.3 g}

cream of tartar.

500 ml {505 g}

Whipping cream

454 g

strawberries

{272 g} 2

ripe bananas

{206 g} 3

kiwis

Mix egg whites until soft peaks.

Slowly add sugar. Beat until dissolved ~5 minutes.

Transfer to parchment. Smooth. Bake at 300F/148C for 60 minutes. Turn off oven, crack open and cool overnight.

Pavlova size of dinner plate will be slightly too large for the cake carrier, due to height.

Whip cream with 2 T sugar.

Slice fruit and place,insert on top.
