Prime Rib Roast
Cut into mirepoix into chunks.

small can of tomatoes |
Season outside liberally with salt and pepper.
Roast 450 F/232C for 15 minutes.
Add mirepox and Roast 300-350 F/176C for 15 min/lb until it reaches 130F/54C.
Rest for at least 20 minutes.
Saute mirepoix, deglaze with wine + 3 cups beef stock.
