Reserve to parchment/wax paper.

In same bowl mix:

2 TBL {26 g}

melted butter or oil(!20.8% !)

1/2 cup {122 g}

milk(!97.6% !)

{50 g} 1

egg(!40.0% !)

1/2 tsp {2.2 g}

vanilla extract(!1.8% !)

384 g 1040 Calories

Total(!270 Calories/100g !)(!307%!)

  1. Return reserved dry ingredients to bowl and fold gently until blended.

  2. Portion into 6 lined muffin cups with disher.

  3. Bake for 20-25 minutes at 400F/204C.

Fruit Muffins

Add

3/4 cup {142 g}

of fruit,

Roast fruit if less liquid desired. Toss fruit in flour prior to adding.

Jam Muffins

Place half of batter into all cups.

Add 1 to 1 1/2 tsp of jam into each muffin, Cover with remaining batter.

Lemon Poppy Seed

Add to dry
