Quick Udon Noodles in Soup

{100 g} 1 - 2

eggs

100 - 150 g

package dried noodles

2 tsp {9.7 g}

soy sauce

2 tsp {8.3 g}

dashi granules

2 tsp

mirin

2 cup {474 g}

water

1/4 tsp

togarashi - optional

Stove on high.

Fill pot with 3 cups water, place on heat and boil.

Prepare 2 cups of water in kettle, place on boil.

Get 1-2 eggs out of fridge.

When water comes to a vigorous boil on pot, place noodles in, reduce high to medium high and stir.

Start 8 minute timer.

With five minutes to go, turn heat on small element to high. Place small fry pan on top,covered.

After 1 1/2 minutes, pour 1 t oil, cover.

After 2 minutes, crack egg(s). Cover and remove from heat.

Start kettle boiling again.

Add stock, mirin, soy sauce, togarashi in large soup bowl. Add water and stir. Cover.

When noodles are done, drain and place in bowl. Put egg(s
