Reeses Pieces Peanut Butter Cookies
Ingredients
butter (8 tablespoons), melted |
creamy peanut butter |
packed brown sugar |
granulated sugar |
vanilla extract |
large egg |
flour |
baking soda |
salt (if using unsalted butter use 1/2 teaspoons salt) |
mini reeses pieces, or more to taste |
Instructions
Heat oven to 350 degrees. Prepare cookie sheets with silpat, cooking spray, or parchment spray.
Combine the melted butter, peanut butter, brown sugar, and granulated sugar in large mixing bowl. With handheld mixer, blend on low speed until combined.
Add in vanilla extract and egg. Mix well.
Add flour, baking soda, and salt. Mix on low just until a dough forms, or use a spatula and mix by hand.
Mix in the reeses pieces using a wooden spoon.
Form into balls (I use a cookie scoop for this) and place on cookie sheet. With the palm of your hand, gently press the tops of the cookie. Not hard at all, you just want it to be slightly flat so it bakes into a better shape.
Cooke for 10-15 minutes. They will look like they’re not done, but they will cook more while cooling.
Let cool on cookie sheet for 5 minutes and then transfer to a wire rack to cool completely.
