small 5"-6" rosti

150 g

medium russet/yukon gold potato

Cook potatoes for 30 minutes in boiling water.

Cool, thoroughly (overnight in frdige), peel with spoon (if desired) then grate.

Over medium to med-high heat, heat 2 tsp each oil and butter in a small fry pan.

Add lightly disc packed potatoes, salt and pepper.

Cook 10 minutes or until golden brown.

Oil and butter top, flip. Cook for 10 minutes until golden brown.

Can also be done on the BBQ using a tin foil lined sheet pan as a griddle. Form patties into 4" (easy of cooking/flipping) rounds by hand. And the cook.
