250 g

peeled,deveined shrimp

1 TBL {15 g}

egg white

3

dashes white pepper

1/2 tsp {1.5 g}

salt

1/2 tsp {2.1 g}

sugar

1 1/2 TBL {20 g}

oil

1 1/2 TBL {12 g}

cornstarch

frozen crab claws (optional)

Rinse, deshell, devein shrimp and pat dry.

Add all the ingredients in a food processor and process until sticky and cohesive.

Make into a ball (40g) with the optional crab claw sticking out as a handle.

Dredge in flour, coat with egg and then panko.

Fry at 350F/176C until golden brown.

Made 5 balls.

Didn’t end up using oil and cornstarch by accident, also didn’t dry shrimp as well as I could have, so I added panko to mix to dry.

Omitting sesame oil for next time.

Try double breading for better crunch.

Use wet hand to form initial ball to prevent shrimp from sticking.

Tasty, but a little hard in texture, hopefully oil & cornstarch will help.

Crab claw would improve the aesthetic.
