Smoked Pork Picnic Shoulder

Start
Place shoulder with netting in large stock pot cover with water,bring to a boil (L10)
Gently boil (L3 Power boil element).
Change water
Change water after boiling for 30 minutes.
Simmer for another 30 minutes then change water again.
Doing this twice makes the ham less salty.
Keep second pot of water on the boil so that the change of water does not take too long to come up to the boil again.
It takes about 15-20 minutes to bring another large pot of water to a full boil.
Add vegetables
Add vegetables with 1 hour or so left to go, cut into large chunks.
After boiling for 4 hours
Extract roast and let rest 10 minutes.
Remove netting, shred some ham, slice the other. Serve.
