Steamer with 2 pans

2.2 kg 5 lb

beets

Rinse beets, trim tops and tails to fit into the two steamer trays.

Bring to boil, 1" of water and then steam on medium heat for about 1 1/2 hours, until soft.

Reserve to sheet pan and cool for 5 minutes.

Bring tray to sink and wearing gloves and under cool running water remove skins.

Reserve to another clean tray or container.

Slice then put into place into

jars.

Freeze or add pickling liquid as desired.

Pickling liquid

2.5 cup {600 g}

vinegar

1 cup {237 g}

water

1 cup {200 g}

sugar

cinnamon stick

cloves

Place spices in bag. bring to boil, then simmer for 15 minutes. Pour over jarred beets, use drained beets on salads in lieu of dressing. Makes enough to fill 5 500ml jars with beets.

If not water bath canning and eating within 1-3 weeks, use less vinegar.
