egg, pinch of salt and pepper. |

panko crumbs |
Generously season pork loin with salt and pepper.
Dredge in flour.
Coat with egg.
Dredge in panko.
Store on rack over sheet pan lined with waxed paper.
Fry in shallow oil for 6 min, keep in preheated 175F/79C oven.
In largest pan fry at level 3 1/2 to 4.
