Cream together for a few minutes

Add following and beat until fluffy 1 -2 minutes

50 g / 3

large egg yolks(!11.1% !)

Meanwhile, sift together

340 g

cake flour(!75.6% !)

110 g

cocoa powder ( use 50 g flour + 10 g potato starch for non chocolate)(!24.4% !)

2 1/4 tsp {11 g}

baking powder(!2.4% !)

1 1/2 tsp {7.0 g}

salt(!1.6% !)

1 1/2 tsp {3.3 g}

freshly shaved nutmeg or more to taste(!0.7% !)

Add in three additions along with

450 g

sour cream, divided. Adjust amount of sour cream to create appropriate slack dough for piping.(!100.0% !)

Being careful to blend just until mixed.

Cake flour substitute:

300 g

flour

40 g

potato starch

Add to piping bag and pipe 3" diameter donuts on parchment paper squares.

Add to 350F/176C oil, paper side up, remove paper after a few seconds or able.

fry until floating, and cracks start to appear ~30 seconds flip and fry for a minute or two until it "opens up" flip and fry for 1 minute longer

Needs more sugar,cocoa and salt. Adding more liquid to slacken dough and make it pipable. Increasing recipe by 50% to yield dozen.
