standard loaf pan

Ingredients

Soak overnight reserve and strain soaking liquid:

60 g 10

dried shiitake mushrooms, diced.

100 g

dried scallops

Remove tough muscle from scallops. Shred. Fry in oil until fragrant reserve.

Fry mushrooms in oil and season with soy sauce and cook until dry.

Reserve.

Over high heat,uncovered, cook in reserved scallop soaking liquid until translucent,(adding water if necessary) then reserve. (15 min)

500 g

daikon, 5mm dice

Cook remaining daikon covered, until translucent. (20 min)

1000 g

daikon, grated

1 TBL {12 g}

sugar

Toss in with reserved daikon, scallops & mushrooms, until no dry flour remains adding water if necessary.

250 g

rice flour

Transfer to parchment lined loaf tin and steam for 60 min.

Rest for 30 minutes, and refrigerate or slice and fry.
