Then mix in

Knead until it comes together then rest for 20 minutes.
Using rolling pin roll out to long oval, the roll up, rotate ninety degrees then roll out again.
Repeat twice. Rest for 1 hour.
Repeat rolling, rotate step three times.
Rest 2 hours.
Roll into thin sheet by hand then use pasta roller for final form.
Cut into noodles with square cross section. Dust with cornstarch, refrigerate or freeze.
Cook in boiling water for 15 minutes, then shock and rinse in plenty of cold water. Reheat with hot water, drain then pour in soup.
