Preheat the waffle iron to the regular setting. Griddle 400F/204C.

In bowl sift or whisk following ingredients:

2 cup {250 g}

all-purpose flour(!100.0% !)

6 TBL {75 g}

sugar(!30.0% !)

3 tsp {15 g}

baking powder(!6.0% !)

1/2 tsp {2.3 g}

salt(!0.9% !)

Separate eggs, putting yolks in one container and whites in another to beat:

egg yolks(!25.6% !)

{132 g} 4

egg whites(!52.8% !)

Whisk whites until stiff. (Doing this step first makes sure no grease gets into the whites)

Melt butter in small microwavable container:

7 TBL {0.0 g} 21 tsp

un-salted butter, melted(! Missing weight and calories!!)

Whisk in to yolks

1 1/2 cup {366 g}

milk(!146.4% !)

4 tsp {17 g}

vanilla extract(!6.8% !)

1 tsp {1.2 g}

new ingredient(!0.5% !)

Pour liquid into dry and mix until almost blended.

Add melted butter and mix.

Fold in egg whites.

Grease waffle iron with neutral oil using silicone brush.

Place approx 250g of batter (enough to cover evenly, ~1 disher/waffle) onto griddle and cook for 6 min, until golden and crispy.

Transfer to wire rack to prevent sogginess, and place in warming drawer or oven.

Let griddle come back up to temp ~3 min and grease before making second batch.
