For the 8" cake, use 60g of white chocolate for layers.

Have raspberry jam on all the layers to cut throught he sweetness.

Alternatively use lemon curd to counteract sweetness of white chocolate.

White chocolate ganache or mousse instead?

When including jam/curd etc.., put butter cream first, then brush the UNDERSIDE of next layer with jam.curd, then sandwich together.
