Chocolate Decadent Cake

bittersweet chocolate

280 g

butter

eggs, separated

bread flour or AP.

1/4 tsp {0.8 g}

cream of tartar

100 g

sugar

Line baking pan bottom and sides with parchment

With double boiler melt chocolate and butter.

Add yolks and mix well.

Whip whites with cream of tartar until frothy, add sugar and whip to soft peaks.

Blend whites, and flour into chocolate mixture in thirds.

Bake at 400F/204C for 15min (9" cake)

Cake should seem a little under cooked, press edges down to make even.

The cake should sink a little in the center.

Cook cake the refrigerate overnight.

Trim cake if necessary, invert then glaze

Glaze

6" cake(1 min microwave)

chocolate

170 g

butter

20 g

corn syrup

Melt then pour into center of cake, spread glaze so sides are covered.
