Sour Cream Chocolate Donuts

3" donuts. 350F/176C Fry.

Sift and reserve.

330 g

AP flour

15 g

potato starch

30 g

cocoa powder

1 TBL {15 g}

baking powder

1/2 tsp {2.3 g}

baking soda

1 tsp {3.0 g}

salt

Cream sugar and eggs until pale.

sugar

116 g ( 2 )

large eggs

Melt butter in microwave approx 60 seconds.

Beat in sour cream, butter and vanilla.

72 g

butter, melted and cooled (5 Tbl)

230 g

sour cream (1 c)

2 tsp {8.7 g}

vanilla

Fold dry into liquid mixture, 1/2 at a time. Chill for 2-24 hours.

Cover and refrigerate for 2-24 hours.

Form into 3 inch donuts by 1/2" thick. Gathering reminants once to recut, use the rest for balls.

Heat oil to 350F/176C. Fry for 3 minutes total. 1 1/2 min each side.

Glaze with Simple Vanilla Glaze
